Coriander and Lime Slow-Cooked Chicken Wraps
Sure, slow cookers tend to be the domain of winter. True! But for some reason, I woke today and just felt like slow-cooked chicken wraps. By now, you're probably aware that I love lime and coriander as a combo and here's just one more example.
Slow-cooked dishes are just so easy. Get a bunch of ingredients, tip them all in the cooker, cover and walk away Then, 6-8 hours later, come home and smell the deliciousness wafting up the stairs. Too bloody good!
Slow-cooked dishes can also be super-healthy if you are using decent cuts and trimming some of the excess fat. In the case of chicken, simply trimming the visible white fat does the job and you're left with a tasty-as, shredded meat that can be eaten freely with rice or added to a wrap.
The best part? As the left-over shredded meat soaks in its juice for a day or so, it just gets better. This recipe gives you enough for a good few sessions!
Ingredients:
SLOW COOKER INGREDIENTS:
- 1 tablespoon of olive oil;
- 1kg of breast chicken, cut into "tenderloin-size slices";
- 3 teaspoons of minced garlic;
- 1x teaspoon of salt;
- Loads of pepper;
- 500ml of chicken stock;
- 200ml of lime juice;
- 1x bunch of coriander;
- 1x brown onion, chopped;
- 1x teaspoon of cumin;
WRAP INGREDIENTS
- Low GI wraps - I use chia or wholegrain;
- Cherry tomatoes, chopped,
- Rice - I've used left over black rice;
- Rocket leaves;
- Black beans

"HOW TO":
This is really it...
- Add all of the ingredients to the slow-cooker and cover. Use high heat if you only have 4-5 hours but low heat is preferable if you are to be 6-8 hours.
- Upon return, remove the meat with tongs to a wooden chopping board and use two forks to shred the tenderised chicken.
- In a very hot frypan, place a small amount of oil and fry off the shredded meat in small batches to brown it for a little crunchiness and extra flavour.
- Return the meat to a container and pour over some of the excess juice.
- Now, pile your ingredients into your wraps and go bananas.
